Southern pastry is built on simple ingredients, but technique is everything. In Biscuits, Scones & Shortcakes: A Southern Pastry Trio, this immersive, hands-on class explores three iconic brunch pastries side by side, giving guests a deeper understanding of how small differences in formula and handling lead to dramatically different outcomes.
Guided by our chef instructors, students will compare doughs through the lens of fat ratios, hydration, and mixing methods, gaining insight into how each decision affects crumb structure, tenderness, and flakiness. The class emphasizes when dough should be handled gently to preserve lightness and when a firmer approach creates better structure and rise.
