We'll begin by creating Zaalouk, a classic Moroccan eggplant and tomato dip infused with garlic, cumin, paprika, and olive oil. As we explore the essential spices that define Moroccan cuisine, you'll learn how simple ingredients are transformed into bold, flavorful dishes.
